Walk into any grocery store and the honey aisle looks straightforward — rows of golden jars, most of them shaped like bears, most of them priced about the same. What the labels do not tell you is that the vast majority of commercial honey has been heated to high temperatures, ultra-filtered through fine membranes, and blended from sources across multiple countries before it reaches the shelf. By the time it arrives in your kitchen, it bears little resemblance to what bees actually produce.

Raw honey is something different entirely. It is honey as it exists in the hive — harvested from the comb, minimally filtered to remove wax and debris, and bottled without the application of heat. The enzymes are intact. The pollen is present. The antioxidants, antimicrobial compounds, and trace minerals that make honey nutritionally interesting are all still there, exactly as the bees left them.

What Is Raw Honey? The Definition That Actually Matters

There is no federal legal standard in the United States that defines raw honey. The FDA does not regulate the term, which means any producer can label their honey as raw regardless of how it has been processed. Understanding what raw honey should mean — and what to look for when you buy — is the only reliable way to know what you are actually getting.

Genuinely raw honey meets three criteria:

  • It has not been heated above hive temperature — typically defined as no more than 95°F to 104°F, the natural temperature range inside a healthy colony
  • It has been minimally filtered — passed through a coarse strainer to remove wax cappings and debris, but not ultra-filtered through fine membranes that remove pollen
  • It has not been blended with added sugars, corn syrup, or other adulterants

Commercial honey production typically involves heating honey to 160°F or higher to kill yeast, slow crystallization, and allow it to pass through the ultra-fine filters that produce the clear, liquid appearance consumers expect. That process destroys the heat-sensitive enzymes — particularly diastase and invertase — and removes virtually all pollen. It also extends shelf life and allows for large-scale blending, which is why most commercial honey is categorized by color grade rather than floral source.

Raw honey looks different. It is often cloudier than commercial honey because the pollen and fine wax particles remain suspended. It will crystallize over time — which is actually a sign of quality, not spoilage. And it varies noticeably from batch to batch as the forage available to the bees shifts with the season.

The Health Benefits of Raw Honey: What the Research Shows

Honey has been used medicinally for thousands of years across virtually every human culture. Modern research has begun to identify the mechanisms behind properties that traditional use long recognized. The evidence is not uniform across all applications, but several areas are well-supported.

Antioxidant Content

Raw honey contains a range of polyphenols and flavonoids — plant-derived compounds with antioxidant activity. These compounds are derived from the floral sources the bees visit, which is why darker honeys — gallberry, buckwheat, and wildflower varieties — consistently test higher in antioxidant content than lighter ones like orange blossom or acacia. Heat processing reduces polyphenol content, which is one reason raw honey from a known floral source outperforms commercial blended honey on antioxidant measures.

Antimicrobial Properties

Honey's antimicrobial activity is well-documented and operates through several mechanisms: low water activity that inhibits microbial growth, low pH, hydrogen peroxide produced by the enzyme glucose oxidase, and in some varieties — most notably Manuka — high concentrations of methylglyoxal (MGO). Raw honey retains the enzyme activity responsible for hydrogen peroxide production; processed honey, having been heated, loses much of this capacity.

The practical application most supported by evidence is wound care. Medical-grade honey products are used clinically for wound treatment, and a growing body of research supports raw honey's effectiveness against a range of bacterial strains, including some antibiotic-resistant varieties.

Prebiotic Activity

Raw honey contains oligosaccharides — complex sugars that are not fully digested in the small intestine and instead reach the colon, where they act as food for beneficial bacteria. Research into honey's prebiotic properties is still developing, but early findings suggest raw honey may support gut microbiome diversity in ways that refined sugar does not.

Pollen and Immune Response

Raw honey contains trace amounts of pollen from the plants the bees visited. Local raw honey — produced from hives foraging in your specific geographic area — is often recommended by beekeepers and some practitioners as a way to gradually expose the immune system to local pollen allergens. The scientific evidence for this specific application is limited and mixed, but the presence of local pollen in raw honey is well-established and is one reason sourcing honey from a local producer has appeal beyond just supporting regional agriculture.

Enzyme Activity

Raw honey contains naturally occurring enzymes — diastase, invertase, and glucose oxidase — that are produced by bees during the honey-making process. These enzymes are heat-sensitive and are largely deactivated by the pasteurization temperatures used in commercial honey production. Diastase activity is actually used as a quality indicator for raw honey in some regulatory frameworks, with low diastase activity being a sign that honey has been heat-treated.

Raw honey is not a medicine and should not replace medical treatment. It should never be given to infants under 12 months of age due to the risk of infant botulism. Individuals with pollen allergies should introduce local raw honey gradually and consult a healthcare provider if uncertain.

Heritage Bee Farm's colonies forage across Southwest Florida, and our honey reflects the seasonal and geographic diversity of what is available to our bees. Here is what makes each varietal unique.

Florida Wildflower Honey

Florida wildflower honey is our most seasonally varied product. It is produced from colonies foraging across a diverse mix of native and naturalized plants — Brazilian pepper, gallberry, palmetto, wildflowers, and whatever else is blooming in the surrounding landscape at the time of harvest. The flavor changes noticeably from spring to fall as the forage composition shifts with the seasons.

Wildflower honey tends toward amber in color, with a robust, complex flavor that reflects the diversity of the source plants. It is among the higher-antioxidant varietals we produce due to the range of polyphenol sources the bees are visiting. For everyday use — cooking, sweetening, eating by the spoonful — Florida wildflower honey is the most versatile option in our lineup.

Gallberry Honey

Gallberry (Ilex glabra) is a native Florida shrub that blooms in spring across the flatwoods and wetland margins of the Southeast. It is one of the most prized honey plants in Florida beekeeping, producing a light amber honey with a clean, mildly sweet flavor and very low moisture content that resists fermentation and crystallization longer than many other varietals.

Gallberry honey has a loyal following among Florida honey enthusiasts who know it. It is not widely available outside of the Southeast, which makes it one of the more distinctive regional offerings Heritage Bee Farm can produce. If you have not tried it, gallberry is the varietal most likely to change how you think about Florida honey.

Saw Palmetto Honey

Saw palmetto (Serenoa repens) is one of Florida's most abundant native plants and an important early-season nectar source for our colonies. Saw palmetto honey is typically light to medium amber with a distinctly bold, slightly medicinal flavor that sets it apart from more delicate varietals. It is not for everyone — the flavor is assertive — but it has an enthusiastic following among honey connoisseurs who appreciate character over mildness.

Saw palmetto is also widely studied as a botanical supplement for prostate health. While honey produced from saw palmetto nectar is not the same as saw palmetto extract, the plant's identity as a wellness plant gives saw palmetto honey natural appeal in health-conscious markets.

Orange Blossom Honey

Orange blossom honey is one of Florida's best-known and most recognized varietals. Produced during the citrus bloom — typically February through April in Central and South Florida — it is light in color, delicately floral, and among the mildest honeys in our lineup. The flavor is unmistakably citrus-adjacent without tasting like orange juice; it is floral and sweet with a clean finish.

Orange blossom honey is a consistent favorite for people who find stronger honeys overwhelming. It pairs well with soft cheeses, tea, and delicate baked goods where a more assertive honey would overpower the other flavors. It is also among the most crystallization-prone varietals we produce — a natural characteristic of its sugar composition that does not affect quality.

Tupelo Honey

Tupelo honey occupies a category of its own among American honey varietals. Produced from the white tupelo tree (Nyssa ogeche) that blooms for a brief two-to-three week window along the river swamps of North Florida and South Georgia, it is considered by many honey specialists to be among the finest honeys produced in the United States.

What makes tupelo distinctive is its unusually high fructose-to-glucose ratio, which gives it an exceptionally smooth, buttery sweetness and — critically — makes it highly resistant to crystallization. Tupelo honey remains liquid almost indefinitely under proper storage conditions, which is part of what has historically made it so prized. The flavor is clean, mellow, and complex in a way that is difficult to describe to someone who has not tasted it.

Tupelo is a limited-availability varietal for us — the bloom window is short, the geography is specific, and genuine tupelo honey is scarcer than its reputation might suggest. When we have it, it moves quickly.

How to Tell If Your Honey Is Genuinely Raw

Because raw honey is an unregulated term in the United States, the label alone is not a reliable guide. Here are the practical indicators of genuine raw honey.

Crystallization

Raw honey crystallizes. This is not a defect — it is a natural physical process driven by the glucose content of the honey and the presence of pollen particles that serve as nucleation points. Commercial honey that has been ultra-filtered and heated resists crystallization for much longer because the particles that trigger it have been removed. If a honey never crystallizes after many months on the shelf, it has almost certainly been processed.

Crystallized honey is fully usable. To return it to liquid form, place the jar in warm water — not hot — and allow it to slowly reliquify. Never microwave raw honey, as the heat will destroy the enzyme activity and antioxidant compounds you are paying for.

Appearance

Genuinely raw honey is often slightly cloudy or opaque, particularly when fresh. The cloudiness comes from suspended pollen, fine wax particles, and air bubbles introduced during extraction. It may also show natural variation in color and viscosity from jar to jar as the floral source shifts with the season. A honey that is perfectly clear, perfectly uniform, and never changes is almost certainly processed.

Source Transparency

A producer who can tell you which county or region their bees foraged, which floral sources contributed to the harvest, and what time of year the honey was extracted is a producer with something to be transparent about. Generic labeling — no origin, no floral source, no farm name — is a reliable indicator of blended, commercial honey regardless of what the label says about raw status.

How to Use Raw Honey

Raw honey is more versatile than most people realize. A few guidelines help you get the most out of it without accidentally defeating the purpose of buying raw.

Eat It as It Is

The simplest use is also the best for preserving everything raw honey has to offer. A spoonful of raw honey eaten directly — or stirred into a room-temperature drink — delivers the full profile of enzymes, pollen, and antioxidants intact. Adding it to tea or coffee that is still boiling will deactivate some of the heat-sensitive compounds; if you want to sweeten a hot drink, let it cool slightly first.

Use It in Cooking and Baking

Raw honey performs beautifully in cooking and baking. In high-heat applications — baked goods, glazes, sauces — some of the heat-sensitive compounds will be affected, but the flavor, the natural sugars, and the antimicrobial properties remain. For everyday cooking use, raw honey is an excellent one-for-one substitute for processed honey and a flavorful alternative to refined sugar in many applications.

Pair It With Food

Different varietals work better with different foods. Orange blossom's delicate flavor suits soft cheeses, yogurt, and tea. Wildflower's complexity holds up well against bold flavors — sharp aged cheese, charcuterie, dark chocolate. Gallberry's clean sweetness makes it an excellent everyday honey for toast and oatmeal. Heritage Bee Farm's colonies are managed across multiple apiary locations in Southwest Florida — positioned to take advantage of Florida's diverse floral calendar and to produce honey that reflects the character of specific plants and seasons rather than a blended average.

Our extraction process is designed to preserve what the bees produce. Honey is extracted from uncapped frames using standard centrifugal extraction, then passed through a coarse strainer to remove wax debris. It is not heated beyond ambient temperature. It is not ultra-filtered. It is not blended across seasons or sources to produce a uniform product. What you receive is what our bees produced from the forage available to them in a specific place and time.

We bottle in small batches as inventory allows, which means varietal availability changes seasonally. Florida wildflower and saw palmetto are available through most of the season. Orange blossom is a spring harvest. Gallberry follows the spring flatwoods bloom. Tupelo is available in limited quantities when the North Florida bloom cooperates.

How to Store Raw Honey

Proper storage protects the quality of raw honey and extends its usable life indefinitely under the right conditions.

  • Store at room temperature in a sealed glass or food-grade container — raw honey does not need refrigeration and should not be refrigerated, as cold temperatures accelerate crystallization
  • Keep away from direct sunlight and heat sources — UV exposure and ambient heat degrade antioxidant content over time
  • Use a clean, dry spoon every time — introducing moisture or contaminants into the jar is the primary cause of fermentation in raw honey
  • Crystallized honey is not spoiled — it can be gently warmed in a water bath to return it to liquid form without damaging quality
  • Honey has an essentially indefinite shelf life when stored properly — archaeologists have recovered 3,000-year-old honey from Egyptian tombs that was still edible
